( Red gram- Gujarati style)

INGREDIENTS :-
.Water : 7 cups
Oily red gram (washed) : 1 & 1/2 cup
Turmeric powder : 1 tsp
salt : 6 tsp
Coriander powder : 2 tsp
Jaggery ( crushed) : 65 gms
Tomatoes : 1 medium
Green chillies ( slit) : 5
cocum ( washed) : 7 pieces
Coriander leaves (chopped) : 2 tsp
Tempering
Vegetable oil : 2 tsp
Mustard seeds : 1 tsp
Cumin seeds : 1/2 tsp
whole dry red chillies ; 2
Curry leaves : 1 sprig
asafoetida : a large pinch
METHODS :-
1. Pour 4 cups water into cooker, add red gram, turmeric powder and salt, stir once.
2. closecooker. bring to full pressure on high heat. reduce heat and cook for 4 minutes.
3. remove cooker from heat. allow to cool naturally.
4. open cooker. mash dal well with back of a ladle to blend with liquid.
5. place cooker with dal on high heat. add remaining water and all other ingredients except for tempering. bring to boil. reduce heat and cook for about 5 minutes, strinng occasionally.
6. For tempering, heat oil in a pan for about 1 minut. add mustard and cumin seeds. when crackling, add red chillies, curry, leaves and asafoetida. stir for a few seconds and pour over dal. stir and serve hot.
