( Vegetable curry - Bengal Style)
Serve - 12 people
INGREDIENTS :-
Water : 1 & 1/4 cups
coriander powder : 3 tsp
cumin powder : 2 tsp
ginger : 10 gms
parwal : 1 & 1/4 ( cut into halves)
Mustard oil : 6 tsp
potatoes : 1/2 kg. ( cut into half)
bay leaves : 2
turmeric powder : 1 & 1/2 tsp
red chilli powder : 4 tsp
garam masala powder : 1 tsp
salt : 4 tsp
ghee : 1 tsp
METHODS :- .
1.Gradually add 1/4 cup water to coriander and cumin powders, blending into a smooth paste.
2. grind ginger into a paste.
3. group parwal into 2 batches. heat oil in cooker for about 5 minutes. lightly fry each batch and remove. in the same oil, lightly fry potatoes and remove.
4. to the remaining oil in cooker , add bay leaves. stir for a few seconds. Add coriander- cumin and ginger paste, turmeric, chilli and garam masala powder. stir and fry . Add parwal, potatoes, salt, and remaining water. stir well.
5. close cooker, bring to full pressure on high heat. remove cooker immediately from heat. release pressure with slight lifting of vent weight. open cooker.
6. Pour ghee evenly over parwal curry.
SERVE HOT
