(Soft Rice with green gram and vegetables)
Serve - 10 people
INGREDIENTS :-
Ginger : 20 gms
Garlic : 10 flakes
Green cardamoms(peeled) : 6
cinnamon : 2 sticks (2 & 1/2 cms each)
cloves : 4
water : 8 cups = 1 tsp
split skinned green gram : 1 cup
mustard oil : 1/2 cup
bay leaves : 4
cumin seeds : 2 tsp
onion (chopped) : 1 large
Basmati rice : 2 cup
cauli flower ( cut into chunky flowerettes) : 300 gms
potatoes ( peeled and cut into quarters) : 2 medium
peas (shelled or frozen) : 1 cup
turmeric powder ; 1/2 tsp
coriander powder : 2 tsp
red chilli powder : 1 tsp
salt ; 5 tsp
ghee : 2 tsp.
METHODS :-
1.Grind together ginger and garlic into a paste.
2. separately grind together cardamoms, cinnamon and cloves into a paste adding a little water from time to time.
3. in a pan, roast green gram on medium heat till golden brown, stirring constantly. remove and wash gram.
4. heat oil in cooker for about 5 minutes. add bay leaves and cumin seeds, stir for a few seconds. add onions and fry till golden brown. add ginger- garlic paste , stir for a few seconds. add washed gram, rice and all other ingredients except water, ground spices and ghee. mix well. add remaining water(8 cup) . stir once.
5. Close cooker, bring to full pressure on high heat. reduce heat and cook for 5 minutes.
6.remove cooker from heat. allow to cool naturally. open cooker, stir in ground spices. pour ghee evenly over khichuri.
SERVE HOT .
