( vindaloo - pork curry - goan style)

INGREDIENTS :-
Whole dry red chillie : 25(kashmiri)
Ginger : 15 gms
Garlic : 8 Flakes
Cinnamon : 2 sticks
Cloves : 8
Cumin seeds : 1 tsp
vegetable oil : 5 tsp
onions (chopped) : 3 large
pork : 1 & 1/2 kgs
Turmeric powder : 1/2 tsp
Salt : 4 tsp
Water 1 cup
METHODS :-
1. Grind together chillies, ginger, garlic, cinnamon, cloves and cumin seeds into a paste, adding a little vinegar in which chillies were soaked, from time , till all the vintagar is used.
2. Heat oil in cooker for about 3 minut. add onions and fry till golden brown. add meat, ground paste, turmeric powder and salt. stir and fry . add water , stir once.
3.Close cooker, bring to full pressure on high heat. reduce heat and cook
4. remove cooker from heat. allow to cool naturally
5. open cooker serve hot
